Ingredients For minted peaches and melons

    cantaloupes, peeled, seeded, cut into 1/2 inch cubes
  • 6
    medium sized peaches, peeled, pitted, sliced
  • 1/2 c
    slivered almonds, toasted
  • 1/2 c
    orange juice
  • 2 Tbsp
    lemon juice
  • 1/4 c
    mint, fresh minced

How To Make minted peaches and melons

    In a large bowl, stir together the cantaloupe, peaches, almonds, orange juice and lemon juice.

    (At this point the fruit can be refrigerated, tightly covered, for up to 8 hours.)

    Just before serving, toss with the mint.

    Serve cold or at room temperature.
