I am allergic to oranges and always looking for cranberry recipes that don't use orange. Cranberries are such a wonderful winter fruit. Here they are combines with pineapple and ginger. Need I say more?

Ingredients For gingerberry relish

  • 1 can
    (8 1/4 ounce) crushed pineapple in syrup not juice pack
  • 2/3 c
    sugar
  • 1/2 c
    water
  • 3/4 tsp
    ground ginger
  • 1 pkg
    (12 ounces) cranberries

How To Make gingerberry relish

  • 1
    In a medium saucepan combine undrained pineapple, sugar, water, and ginger. Cook, stirring constantly until sugar is dissolved. Add cranberries .

    Bring mixture to a boil. Continue stirring frequently. Reduce heat and simmer until cranberries pop (4-5 more minutes). Cool. Transfer to an airtight container and keep refrigerated until used. Will keep up to 3 days.
