fruit essentials: raspberry jalapeno fruit spread
This is an easy/peasy recipe to make and will live in the fridge for up to a year. Although I doubt it will last that long. Easy to make with a minimum of ingredients, and tastes awesome… Oh, and by the way, it only takes about 30 minutes to makes. Use this as a base, vary the fruits… Have fun with it. As a matter of fact, if you do not want the heat, leave the peppers out. So, you ready… Let’s get into the kitchen.

Ingredients For fruit essentials: raspberry jalapeno fruit spread
- PLAN/PURCHASE

2 1/2 cwhite sugar, granulated variety

2 cfrozen or fresh raspberries, frozen is just fine

1 - 2 mdpeppers, like jalapeno, habanero, or any one of your favorites, seeded and finely chopped

1 Tbsplime juice, freshly squeezed

1 Tbspfruit pectin, powdered variety

1PREP/PREPARE

2You will need a medium size saucepan to make this recipe.

3Gather your ingredients (mise en place).

4Crush the berries, add them to a saucepan over medium-high heat, and then add all the ingredients; except the pectin.

5Bring to a rolling boil, while constantly stirring, about 4 – 5 minutes.

6Because you are making a fruit spread, the best tool to use here is a wooden spoon.

7Stir in the pectin, and boil for an additional minute.

8Remove from the heat and skim off any foam that sits on top.

9Add to jars and allow to completely cool before placing into the refrigerator.

11Use it in any way you would use a good fruit spread. I like it on toast with a bit of butter. Enjoy.
