Oh MY! That's what I said when I first tasted this! I created this zingy peach dressing to pep up a boring low carb salad. It's simply scrumptious!! Use a soft ripe peach to get all that sweet juicy peach flavor.

Ingredients For zingy peach vinaigrette

  • 1
    ripe peach, sliced into chunks (with skin)
  • 3 Tbsp
    olive oil
  • 2 Tbsp
    apple cider vinegar
  • 1/2 Tbsp
    splenda brown sugar blend
  • 1 pinch
    salt
  • 1 pinch
    pepper
  • 1/4-1/2 tsp
    sriracha sauce, to taste

How To Make zingy peach vinaigrette

    Combine all ingredients, except sriracha sauce, in a blender; blend until smooth. Stir in sriracha until you reach the level of spiciness you like. Serve. Refrigerate any remaining sauce.
  • Day 2-- added cantaloupe to a salad and drizzled with the dressing... DELICIOUS!
