This dressing is what I would call the essence of Summer. It is light and flavorful, and goes amazingly well, on a plate of fresh Summer garden greens. Make sure that your lemon juice is freshly squeezed, and the champagne vinegar can be found at most grocers. No refrigeration is necessary, and if you can allow it to rest overnight before using, you will not be disappointed. So, you ready… Let’s get into the kitchen.

Ingredients For summer essentials: lemon vinaigrette

  • PLAN/PURCHASE
  • 3 Tbsp
    lemon juice, freshly squeezed
  • 1 Tbsp
    champagne vinegar
  • 2 clove
    baked garlic, smashed
  • 1 md
    shallot, chopped
  • 1/3 c
    olive oil, extra virgin
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
