This is a vegetarian version of this salad. If you prefer, you can use bacon grease and crumbled bacon in place of the vegetable oil and "bacon" bits.

4mushrooms, sliced

onion, thinly sliced

tomato, thinly sliced

2eggs, hard boiled and sliced

1 Tbspsunflower seeds, optional
- WARM "BACON " DRESSING

3 Tbspvegetable oil
-
2 tsp"bacon" bits (i use a vegetarian brand of artificial bacon bits)

2 Tbspred wine vinegar
-
1 Tbspsugar
-
1/2 tspdijon mustard

pincheach, salt and pepper
How To Make spinach salad with warm "bacon" dressing

1Divide spinach, mushrooms, onion, tomatoes, and sunflower seeds between 2 plates. Top with sliced eggs

2Place oil and "bacon" bits in a microwave safe measuring cup. Microwave 20 - 30 seconds, just until warm. Whisk in vinegar, sugar, dijon mustard. Season with salt and pepper.

3Drizzle warm dressing over salads and serve immediately.
