I created this great recipe years ago to use the extra zucchini and tomatoes from my garden. It's quick, easy, and tasty!!

Enjoy this marinated zucchini salad as a simple and healthy side dish. The thinly sliced zucchini, sweet onion, and ripe tomato is a nice blend of textures. Italian dressing adds zesty flavor. Fresh basil adds its sweet, slightly spicy flavor. Freshly grated Parmesan cheese is a delicious final touch. Easy to make, you'll find yourself returning to this delicious recipe all summer.

Ingredients For marinated zucchini salad

  • 2 sm
    zucchini, sliced
  • 1 md
    sweet onion, halved and sliced
  • 1 lg
    tomato, peeled and roughly chopped
  • 1/4 c
    fresh basil, chopped
  • 8 oz
    Italian dressing, bottled
  • salt and pepper, to taste
  • 1 Tbsp
    freshly grated Parmesan cheese

How To Make marinated zucchini salad

  • Mix all ingredients (except Parmesan) in a large bowl.
