I love the sweet-tart flavor of this dressing over a bowl of mixed greens and veggies. It's such a "summertime" taste! This recipe makes enough vinaigrette for 4 medium-sized salads or 2 large ones. Be sure to use soft, ripe kiwi or it can be a bit tart.

Ingredients For kiwi vinaigrette

  • 2
    kiwi fruit, peeled & coarsely chopped
  • 3 Tbsp
    canola oil
  • 2 Tbsp
    red wine vinegar or apple cider vinegar
  • 1 Tbsp
    honey
  • 1/4 tsp
    salt
  • 1/4 tsp
    white pepper

How To Make kiwi vinaigrette

  • 1
    Combine all ingredients in a blender and process for 5-10 seconds or until smooth. Pour into a serving container and refrigerate. Serve over greens.
