grilled vegetable marinade/dressing

I first started using this marinade/dressing on grilled tomatoes, but my favorite thing to use it on is asparagus. I usually dress the vegetables in a casserole dish and put them right back into it when I take them off the grill to save on clean-up. This is great on tomatoes, asparagus, green beans, squash and eggplant.

Ingredients For grilled vegetable marinade/dressing

3 Tbspolive oil

1 1/2 Tbspbalsamic vinegar

2 tsphoney
-
1/4 tspdijon mustard

1/2 tspfresh rosemary, removed from stems and chopped

1/2 tspfresh thyme, removed from stems

salt and pepper, to taste
How To Make grilled vegetable marinade/dressing

1Wash and prepare vegetable of choice, place in casserole dish.

2Combine the oil, vinegar, honey, dijon, rosemary and thyme in a small bowl and whisk until combined. Pour over vegetables and then add salt and pepper.

3Transfer vegetables to grill and cook over medium heat until tender, usually about ten minutes. Place cooked vegetables back in casserole dish and serve warm.
