1/2 ccoarsely chopped fresh parsley (about 1/4 of a bunch)

1 cchopped basil

1/2 cchopped chives

2 clovegarlic

1/2 lbfresh baby spinach leaves

1 Tbspapple cider vinegar

1 cdairy sour cream
-
2 cmayonnaise
-
2 1/4 tspdijon mustard or to taste

2 tspanchovy paste,optional if using omit salt

1 tspsalt

3/4 tspwhite pepper

1 tsplemon juice, fresh

1In a blender, pulse together, the parsley, basil, chives, spinach,and garlic with the vinegar; blend until smooth.

2Remove the mixture to a large bowl and whisk in the mayonnaise, mustard, sour cream, anchovy paste(if using) salt(omit if using anchovy) pepper and lemon juice.

3Taste and adjust the flavoring ans seasonings as desired. This will keep, covered and refrigerated , up to 2 weeks. Great on salads, sandwiches, and jello salad recipes.
