I've noticed that my supermarket has been replacing "good old yogurt" with the pricier, richer "Greek Style". I was reluctant to give this newcomer a try, but finally caved and incorporated it into my Green Goddess Salad Dressing, replacing the sour cream with the Greek yogurt. I was impressed. It's quite good. And very rich.

Ingredients For greek yogurt green goddess dressing

6 ozplain fat free greek yogurt

1/2 clight mayonnaise

1small scallion chopped

1 Tbsplemon juice

1/2 tsptabasco sauce

1/2 tspanchovy paste

1 clovegarlic chopped

1 Tbspitalian parsley chopped
How To Make greek yogurt green goddess dressing

1Place all ingredients except parsley in a blender or food processor and process until smooth. Add parsley and whirl until the mixture becomes a light green color.

2Serve on your favorite salad. My recommendation is Bibb lettuce, sliced cucumbers, grape tomatoes, crumbed blue cheese, scallions, homemade croutons and hard boiled eggs. A little bacon would be nice too.
