dressing essentials: rumbustious russian dressing
This is my recipe for Russian Dressing. It has many of the usual suspects, when it comes to ingredients, and one or two others that give it its distinct flavor. A few years ago, I added some freshly chopped tarragon, and never looked back. But, tarragon is a distinctive spice, and some people do not like the taste of it, so I made it an optional ingredient. I will just say this... If you like Russian dressing, you will LOVE this version. So, you ready… Let’s get into the kitchen.

1 Tbspdehydrated onions, crushed to a powder

1 Tbspyellow onions, grated, and minced

1 cmayonnaise, plain variety, and homemade, if possible

2 Tbspchili sauce, homemade, if possible

2 Tbspketchup, homemade, if possible

1 Tbsprice wine vinegar

1 Tbspfreshly chopped parsley

2 - 3 tsphorseradish

1 tsphot sauce, i use frank’s

1 tspworcestershire sauce, homemade, if possible

salt, kosher variety, to taste

2I am always attempting to make things homemade, and for this recipe, I am using several homemade items. 3This recipe should last for 2 – 3 weeks in fridge. Just make sure it is in a tightly-sealed, non-reactive jar. So, make just enough to last for 2 or so weeks.

4I love the addition of the chopped tarragon; however, not everyone is a fan of that flavor, so I made it an optional item.

5Gather your Ingredients (mise en place).

6Grind the dehydrated onions into a powder.

7Grate and mince the onion.

8Add all the ingredients together (except the salt), to a bowl, and whisk to combine.

9Add a bit of salt at a time, and then whisk and sample, until you achieve the desired taste.

10PLATE/PRESENT

11Seal tightly in a non-reactive jar, and keep in the fridge until ready for use. Enjoy
