Sliced cucumbers and onions in a light homemade sweet/tart vinegar dressing. This recipe is easy, tasty and down right yummy. Make early in the day and let marinate in fridge. Really good served with fried chicken, mashed potatoes and creamy gravy. I make them sugar free with splenda.

Ingredients For cucumbers and onions

  • 1
    cucumber, sliced thin
  • 1
    sweet onion, slice thin (i like the texas sweet)
  • 3/4 c
    sugar, can use splenda instead
  • 1/3 c
    cidar vinegar (i use white distilled vinegar)
  • 2 Tbsp
    water
  • 1/2 tsp
    salt (optional, i don't add it)
  • pepper, to taste
  • couple dash
    celery seed
  • couple dash
    dried parsley

How To Make cucumbers and onions

    Layer sliced cucumber and onions alternately into bowl, set aside.

    Mix remaining ingredients together, stir until sugar is dissolved. Pour dressing mixture over cucumber and onion mixture. Cover and refrigerate for a couple of hours to marry flavors.

    Notes: This recipe can easily be doubled. If my cucumber and onion are large I will double the dressing ingredients. I like the dressing poured over tomato chunks, chopped cucumber chunks, chopped green onions, green and red pepper chunks and sliced celery for another salad variation. Enjoy!
