Cucumber and dill is always a pleasant combination. When I made this the first time I didn't know what to expect. It has a nice crisp taste and is good on fresh salads.

Ingredients For creamy cucumber dill dressing

  • 1
    6 inch piece seedless cucumber, peeled
  • 1 clove
    garlic (use a small clove)
  • 3/4 c
    mayonnaise
  • 1 1/2 tsp
    lemon juice
  • 1 tsp
    dry mustard
  • 2 Tbsp
    fresh dill, chopped or 1 tbsp dry
  • salt to taste

How To Make creamy cucumber dill dressing

  • 1
    Puree cucumber and garlic in food processor. Place puree in a fine mesh strainer, press down gently with a spoon and let drain. (Cucumbers are largely water, so if they are not well drained, the dressing will be too thin)

    Place remaining ingredients in food processor and blend together

    Add pureed cucumber and garlic. Mix together. If too thick, thin with a little water, a teaspoon at a time. Refrigerate for an hour (or longer) before serving.
