Love salads in the summer ~ to hot to cook and so healthy for us. This one is very good and different one to whip up ! Hope you enjoy it!!

Ingredients For cranberry salad / poppy seed dressing

  • 1 bunch
    head of romaine
  • 1
    pear
  • 1
    apple
  • 1/2 c
    cashew nuts
  • 1/2 c
    swiss cheese, cubed
  • 1/2 c
    dried cranberries
  • lemon juice
  • POPPY SEED DRESSING:
  • 3/4 c
    sugar
  • 1/3 c
    cider vinegar
  • 1 tsp
    dry mustard
  • 1 1/2 Tbsp
    poppy seeds
  • 1 c
    olive oil
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper

How To Make cranberry salad / poppy seed dressing

    Salad: Cut up romaine. Add rest of ingredients. Toss with Poppy Seed Dressing.

    Note: If making ahead of serving, add lemon juice to pear and apple cubes in Ziploc bag. Refrigerate.
