This dressing is highly flavored, so a little goes a long way, on salad greens. Excellent on fresh sliced tomatoes. Use as a marinade, as well. Originally from The Ultimate Southern Living Cookbook.

Ingredients For basil vinaigrette

  • 2/3 c
    olive oil
  • 1/3 c
    red wine vinegar
  • 1 tsp
    sugar or diabetic alternative
  • 3/4 tsp
    salt
  • 2 Tbsp
    chopped fresh basil or 2 tsps. dried basil
  • 1/4-1/2 tsp
    freshly ground pepper

How To Make basil vinaigrette

  • 1
    Combine all ingredients, in a jar. Cover tightly, and shake vigorously. Store in refrigerator. Makes 1 cup.
