I had an avocado that needed to be used. I kept noticing recipes for avocado dressing. Hmm... So I checked some out. I found one that looked interesting and without cilantro. So I started with that and doubled it for starters, since it used half an avocado (??) then added, removed, edited, and fussed with it. LOL. Why bother looking up a recipe in the first place? Mostly for proportion suggestions. What I ended up with is amazing & delicious. I think it will be great on salad, for starters. It might be too loose for a dip, which is something to keep in mind. Just use less water.

1scallion - white & green parts, chopped

2limes - juice and zest

1jalapeno pepper - seeded & minced

1/2 cfresh parsley, chopped

2 clovegarlic, minced

2/3 cextra virgin olive oil

1 cwater
-
1/2 tspsea salt
How To Make avocado dressing

1Combine all in a food processor & process until smooth. Taste & add more salt if necessary.
