anchovy vinaigrette
My husband loves anchovies on pizza (yuck?) and loves Caesar salad. Some dressings contain anchovies and some don't. This is a lighter version of a Caesar-type dressing that contains that salty kiss of anchovies. Serve it over romaine with some croutons to approximate a Caesar salad.

Ingredients For anchovy vinaigrette

1/2 cextra virgin olive oil

3 Tbspsherry or white wine vinegar

3anchovy fillets, minced

1/2 tspground black pepper
How To Make anchovy vinaigrette

1Add all ingredients to a jar or bottle with a tight fitting lid.

2Shake well to blend. If it sits for a while, it will separate, so shake again before serving.
