Full of fresh ingredients, vibrant colors and awesome flavors, this Texas Caviar is a crowd pleaser! This dip is a natural with tortilla chips but it can be used as a side dish or as a topping.

Ingredients For texas caviar
- DIP

1 1/2 corange peppers, seeded, membranes removed and finely chopped

1 1/2 cred peppers, seeded, membranes removed and finely chopped

3/4 cpoblano peppers, seeded, membranes removed and finely chopped

1/4 cjalapeño peppers, seeded, membranes removed and finely chopped
-
1/2 cred onions, finely chopped
-
3/4 croma tomatoes, seeded and finely chopped
-
1 can(15 oz) black-eyed peas, rinsed and drained
-
1 can(15 oz.) black beans, rinsed and drained
-
1 can(15 oz.) corn kernels, drained
-
1 can(4 oz.) diced green chiles
-
2 Tbspfresh cilantro, finely chopped
- LIME DRESSING
-
1/4 cgrapeseed oil
-
1/4 cfreshly squeezed lime juice
-
3 lgcloves garlic, pressed
-
1 Tbspagave nectar
-
1/2 tspchipotle chili powder
-
1/2 tspground cumin
-
freshly ground black pepper, to taste (i always use mixed peppercorns)

ground himalayan sea salt, to taste
How To Make texas caviar

1In a large bowl, combine all the ingredients except cilantro. In a small bowl, combine all the lime dressing ingredients; whisk until well blended. Pour dressing over pepper mixture, stir, cover and transfer to the fridge for at least 6 hours and up to 8 hours.

2Before serving, sprinkle fresh chopped cilantro and serve it with tortilla chips or use it as a side dish or as a topping. 12 servings
