Gotta love a hot summer day when you don't want to cook but just want to eat something light. This is it! It is a flavorful mix with fresh from the garden veggies & herbs...so refreshing and perfect for a summer afternoon out chillin' by the pool or relaxing in the shade paired up with some delicious mango iced tea!!!

Ingredients For summer chillin' chickpea salad

2 bunchparsley,chopped
-
1 bunchcilantro, fresh, chopped
-
1/2 smonion
-
2 canchick peas, drained & rinsed
-
1 cancannelini beans, drained & rinsed

12 - 15 smchery tomatoes, sliced or diced

2 - 3 smgarlic cloves, minced
-
a pinchor two of pepper
-
a pinchor two of salt
-
a pinchor two of beau monde
-
dasholive oil, extra virgin, several
-
dashlime juice, several to your taste
-
8 - 12 ozgruyere cheese, shredded or parmesan

4 Tbspmuffuletta olive mix

1 bagpita chips, tortilla chips or bread for dipping
How To Make summer chillin' chickpea salad

1Rinse and drain your beans then set aside.

2Chop up your herbs, dice your onions, slice your fresh tomatoes, mince your garlic. Add all to a bowl and toss gently. Add your olive oil to your liking, then the lime juice. Add your olive mix and gruyere and toss some more. Add a little salt, pepper, beau monde and taste again to see how you like it. Adjust to your taste.

3Pour into a serving bowl, add your pita chips, tortilla chips or bread that you are serving it with to the side and your ready to eat.
