Ingredients For spicy corn dip aka "cowboy crack"

2 (15oz) cansweet corn

8 ozpepper jack cheese (shredded)

8 ozcream cheese, room temperature

8 ozmild cheddar(shredded)

3 divided Tbspbutter or margarine

3/4 cregular mayonnaise

1-3 tsppickled jalapenos(diced)

2 Tbspjalapeno pickling liquid

to tastesalt and pepper
How To Make spicy corn dip aka "cowboy crack"

1First heat oven to 350°. Open and drain cans of corn. Next place softened cream cheese, all of pepper jack cheese, and half of cheddar cheese in a bowl and combine well. Then add in mayonnaise, pickling liquid, jalapenos, salt n pepper. Mix well. Fold in corn. Mix till everything looks evenly mixed

2Butter a casserole dish with 1Tablespoon of butter. Pour mixture into dish. Sprinkle remaining cheese over top and dot with remaining 2Tablespoons of butter. Bake in oven 350° for 15 minutes till nice and bubbly. Let cool slightly and serve warm or at room temperature with tortilla chips
