side essentials: crumbled blue cheese dip

I cannot conceive of cooking up a batch of chicken wings, without having a bowl of crumbly blue cheese dip, to plunge them in. As a matter of fact, in some States, you can be fined and thrown in jail, just for leaving it off the menu. This recipe has traditional ingredients (blue cheese, to name one), and one or two other bits-and-bobs, to make it, shall we say, rather interesting. So, you ready… Let’s get into the kitchen.

Ingredients For side essentials: crumbled blue cheese dip

  • PLAN/PURCHASE
  • 1/2 c
    blue cheese, crumbled variety, about 2.5 ounces (70g)
  • 1/4 c
    sour cream
  • 2 Tbsp
    mayonnaise
  • 2 tsp
    lemon juice, freshly squeezed
  • 1 tsp
    buttermilk powder
  • 1 tsp
    frank’s hot sauce, or to taste
  • 1 pinch
    cayenne pepper
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste

How To Make side essentials: crumbled blue cheese dip

    When I am using this dip with chicken wings, I like adding the Frank’s Hot Sauce; however, if I am using if for another purpose (depending on the recipe), I usually leave it out.

    Gather your Ingredients (mise en place).

    Mix all the ingredients (except the blue cheese) in a bowl, and then fold in the blue cheese bits.

    Chef’s Note: Do a final tasting for proper seasoning.

    Cover with cling wrap, and allow to rest in the refrigerator for a few hours before using.
