My husband and I love guacamole dip! Unfortunately, we can't always find a version of the dip in the grocery store that we really like, SO, I created a fast and easy version that we both enjoy.

Ingredients For quick zippy guacamole dip

  • 4
    avocados, ripe
  • 1 can
    rotel with cilantro and lime juice
  • 1 tsp
    coarse sea salt, ground

How To Make quick zippy guacamole dip

  • 1
    Wash avocados and slice in half, trying to avoid slicing the seed in the middle. Gently separate each avocado and with a spoon scoop each avocado's 'meat' (discarding the seed) into a Rubbermaid or Tupperware container.

    Add salt and gently mash the avocados with a potato masher, or sturdy fork, until soft and 'well kneaded'

    Open can of Rotel and drain. Add to Avocados and stir until blended.

    Seal container with lid and chill 30-45 minutes. Goes great with pita bread, Melba toast or good 'ol tortilla chips!
