My husband and I love guacamole dip! Unfortunately, we can't always find a version of the dip in the grocery store that we really like, SO, I created a fast and easy version that we both enjoy.

Ingredients For quick zippy guacamole dip

4avocados, ripe

1 canrotel with cilantro and lime juice

1 tspcoarse sea salt, ground
How To Make quick zippy guacamole dip

1Wash avocados and slice in half, trying to avoid slicing the seed in the middle. Gently separate each avocado and with a spoon scoop each avocado's 'meat' (discarding the seed) into a Rubbermaid or Tupperware container.

2Add salt and gently mash the avocados with a potato masher, or sturdy fork, until soft and 'well kneaded'

3Open can of Rotel and drain. Add to Avocados and stir until blended.

4Seal container with lid and chill 30-45 minutes. Goes great with pita bread, Melba toast or good 'ol tortilla chips!
