This is one of my favorite dishes at one of our local Mexican restaurants. I have analyzed it, researched some other recipes and THINK I have come pretty close to a copy cat recipe. Serve with tortillas or toasted French bread slices. I have had this three ways; as written, with grilled chicken added and with grilled shrimp added.........I like them ALL! Although the restaurant considers this an appetizer, when we get the chicken or shrimp in it, served with tortillas for wrapping, we make it our meal. Very filling!

Ingredients For mexican cheese dip (flameda)

    onion, chopped
  • 1
    bell pepper, chopped
  • 1 pkg
    sliced mushrooms
  • 16 oz
    shedded jack cheese or mexican blend cheese
  • 2 or 3 Tbsp
    sherry
  • ---
    grilled chicken or shrimp (optional)

How To Make mexican cheese dip (flameda)

    In a small amount of butter or olive oil, saute bell pepper and onions until limp. Add mushrooms and sherry. Cook, stirring frequently, until sherry evaporates.

    In a microwaveable bowl, mix the veggies with the cheese and microwave until cheese is melted, stirring every minute or so to make sure cheese does not burn. If you want to add chicken or shrimp, stir them into the melted cheese at this point and serve warm.
