You must make this with fresh jalapenos. Even if you halve (or quarter!) the amount, fresh jalapenos will give you the best-tasting salsa.

4fresh mangoes

3/4red onion

bunchcilantro, fresh

1lime, juiced

5 Tbspolive oil, extra virgin

2 tspkosher or sea salt

2 canblack beans, unsalted

1 tspblack pepper

1jalapenos, fresh
How To Make mango black bean salsa

1Start with a large mixing bowl. Add the following ingredients as you prep them:

2peel and chop the mangoes into small pieces

3dice the jalapenos (you can make the salsa hotter by leaving in the seeds)

4dice red onion

5chop cilantro
-
6rinse well and drain black beans
-
7add it all together, plus salt, pepper, oil and lime juice; gently turn over with a big spoon to mix

8Once it's all mixed together, try to chill it in the fridge and let it sit for an hour prior to serving.

9Voila! Delicious mango black bean salsa [serve it with chips, as a salad-topper, atop pork chops, or however you like!]
