My mother taught me to make this when I was a child. I have modified it a bit over the years, but it's something that is requested if the group knows I am going to be contributing to the refreshments. When my 4 adult kids are around, this is the first request! Enjoy!

Ingredients For mama's pimento cheese

  • 2 lb
    colby jack or sharp cheddar cheese, finely grated (i use ready grated)
  • 4 oz
    diced pimentos with juice
  • 4 oz
    old el paso chopped or diced mild green chiles with juice
  • 1 pt
    hellmans real mayonnaise

How To Make mama's pimento cheese

    Mix all together in large bowl. Adjust mayonnaise to desired consistency for spreading. Spread on your favorite bread and enjoy!

    This will serve a group (makes about 20 sandwiches) To adjust down, use 1 lb. cheese and the small jar of pimentos and small can of green chiles.
