Ingredients For healthy black bean dip

216 oz cans black beans, drained

18 oz jar picante sauce, divided

1 tspcanola oil

1onion, finely chopped
-
1red bell pepper, finely chopped

3 tspminced garlic
-
2 tspground cumin
-
3/4 tspsalt
-
1/2 creduced-fat, shredded cheddar cheese

1 lgtomato, chopped
How To Make healthy black bean dip

1In blender, combine 1 can black beans and 1/4 cup picante sauce. Blend until smooth. In lg skillet, over medium heat, Heat oil. Add onion, red bell pepper and garlic. Saute until onion is soft.

2Add pureed bean mix to skillet, along w/ cumin, salt and remaining beans and picante sauce. Mix well. Bring to a boil. Reduce heat to low.

3Simmer for 5 mins, stirring occasionally. Pour dip into serving bowl. Serve w/ baked tortilla chips and light sour cream
