I love guacomole dip and a dear friend of mine who passed gave me this. Its quite easy and tasty and I think of her every time I make it. You can buy the guacamole spice packet in the condiment section of your local store, its gives it such flavor but you can leave it out if your a guac purest!

Ingredients For guacomole dip in memory of penny

  • 2
    avocados
  • 2 Tbsp
    ro-tel tomatoes
  • 1 Tbsp
    sour cream
  • 1 pkg
    guacamole spice packet
  • salt and pepper to taste
  • 1 Tbsp
    lime juice

How To Make guacomole dip in memory of penny

    Peel and chunk up your avocado...not to fine, you want it a little chunky.

    Add in your guac spice packet, sour cream, ro-tel tomatoes, salt and pepper and blend well.

    The dip needs to rest in the fridge for about an hour so the flavors blend. Add the lime juice to top of the dip to keep it from turning brown to soon.

    I also layer saran wrap over the dip and press it onto the surface to get out the air pockets...that also helps keep it from browning.

    When ready serve with tortilla chips or add to your favorite mexican dish. Enjoy!
