Ingredients For fried avocado strips with cilantro ranch

  • FOR AVOCADO:
  • 2
    avocados, peeled and sliced into 8 strips per avocado
  • 1/4 c
    flour
  • 1/8 tsp
    salt
  • 2
    eggs beaten well
  • 1/4 c
    panko bread crumbs
  • vegetable oil for frying
  • FOR CILANTRO RANCH DIPPING SAUCE
  • 1/2 c
    buttermilk
  • 1/4 c
    mayonnaise
  • 1/4 c
    plain greek yogurt
  • 1/4 c
    fresh cilantro leaves
  • 1
    tomatillo, husks removed, and chopped
  • 1
    clove garlic
  • 1
    green onion
  • juice of 1/2 lime
  • 1/8 tsp
    cumin
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1
    small jalapeno, seeds removed, leave them in if you want it spicy
  • OPTIONAL TOMATO RELISH: MIX EVERYTHING IN A BOWL - SERVE A COUPLE TABLESPOONS ON PLATE WITH AVOCADOS

    medium tomatoes, seeded and diced

    poblano pepper, seeded and diced
  • cilantro leaves roughly chopped to taste
  • 1/4
    mango, peeled and diced
  • 1/8 tsp

  • juice of 1/4 lime

How To Make fried avocado strips with cilantro ranch

    For the dipping sauce - put all ingredients in food processor and blend. Pour in a container and refrigerate until ready to serve.

    In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.

    Meanwhile, mix flour with 1/4 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates. Dip avocado in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.

    Fry 2 to 3 avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste.
