I might be tempted to call this my “Accidental” Avocado Sauce, because when I got up this morning at 3:30a, I discovered two really, really ripe avocados on the counter. I calculated they had about 24 hours of life left, so I needed to make something. I thought about constructing some guac, but then remembered someone using Greek yogurt, and thought… What could go wrong? (that is a rhetorical question). It was pretty good, until drizzling with the hot sauce, and that just took it over the dang top. So, you ready… Let’s get into the kitchen.

This is the kind of dip that you want to make within an hour or so of using. A good trick to keeping it fresh is to take a piece of cling wrap and press onto the surface of the dip. That will separate it from the air and prevent it from turning brown.

Splash some hot sauce on top, and serve as a dip, a side for chicken fajitas, or a topping for baked potatoes. It goes really well with these sous vide shrimp (pictured). Enjoy.
