dip essentials: super creamy avocado sauce
I might be tempted to call this my “Accidental” Avocado Sauce, because when I got up this morning at 3:30a, I discovered two really, really ripe avocados on the counter. I calculated they had about 24 hours of life left, so I needed to make something. I thought about constructing some guac, but then remembered someone using Greek yogurt, and thought… What could go wrong? (that is a rhetorical question). It was pretty good, until drizzling with the hot sauce, and that just took it over the dang top. So, you ready… Let’s get into the kitchen.

1 cgreek yogurt, plain variety

2 lgavocados (nice and ripe) halved and pitted

2 clovebaked garlic smashed

1 Tbsplime juice, freshly squeezed

1 Tbsplemon juice, freshly squeezed

1 Tbspfresh clover honey

salt, kosher variety, to taste

white pepper, freshly ground, to taste

2 - 3 dashhot sauce, drizzled on top, i prefer frank’s

How To Make dip essentials: super creamy avocado sauce

1PREP/PREPARE

2This is the kind of dip that you want to make within an hour or so of using. A good trick to keeping it fresh is to take a piece of cling wrap and press onto the surface of the dip. That will separate it from the air and prevent it from turning brown.

4Gather your ingredients (mise en place).

5Place the baked garlic on a cutting board and sprinkle with a bit of salt.

6Use the flat side of a kitchen knife to smash it up.

7Place all of the ingredients into a mixing bowl (except the hot sauce).

8Mix together with a fork until nice and smooth, or you could use a blender.

9Before serving, do a final tasting for proper seasoning.

11Splash some hot sauce on top, and serve as a dip, a side for chicken fajitas, or a topping for baked potatoes. It goes really well with these sous vide shrimp (pictured). Enjoy.
