Ingredients For cowboy caviar

  • 1 can
    black beans, drained & rinsed
  • 1 can
    pinto beans, drained & rinsed
  • 1 can
    black-eyed peas, drained & rinsed
  • 1 can
    white shoepeg corn, drained & rinsed
  • 2 can
    ro tel w/green chilies, drained
  • 2/3 c
    green onions, chopped
  • 2/3 c
    cilantro, chopped
  • 3-4
    avocados, chopped
  • MARINADE
  • 1/2 c
    olive oil
  • 3/4 c
    red or rice wine vinegar
  • 2 clove
    garlic, pressed or already minced
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 tsp
    cumin
  • 1 Tbsp
    water
  • 1 c
    sugar

How To Make cowboy caviar

  • 1
    Combine all beans & veggies, except avacado, in a large bowl.
  • 2
    Mix all marinade ingredients; bring to a boil then cool.
  • 3
    Pour marinade over beans & vegetables then stir; gently stir in chopped avacado.

    chill 24 hrs. Stir several times.
  • 5
    Can be made the day before to combine flavors. Add the avocados the day you are serving it. Serve with tortilla chips or add to Soft tacos..
