Ingredients For cowboy caviar

1 canblack beans, drained & rinsed

1 canpinto beans, drained & rinsed

1 canblack-eyed peas, drained & rinsed

1 canwhite shoepeg corn, drained & rinsed

2 canro tel w/green chilies, drained
-
2/3 cgreen onions, chopped
-
2/3 ccilantro, chopped
-
3-4avocados, chopped
- MARINADE
-
1/2 colive oil
-
3/4 cred or rice wine vinegar
-
2 clovegarlic, pressed or already minced
-
1 tspsalt
-
1/2 tsppepper
-
1 tspcumin
-
1 Tbspwater
-
1 csugar
How To Make cowboy caviar

1Combine all beans & veggies, except avacado, in a large bowl.

2Mix all marinade ingredients; bring to a boil then cool.

3Pour marinade over beans & vegetables then stir; gently stir in chopped avacado.

4chill 24 hrs. Stir several times.

5Can be made the day before to combine flavors. Add the avocados the day you are serving it. Serve with tortilla chips or add to Soft tacos..
