Ingredients For corn queso

3 cfrozen corn thawed

2 Tbspolive oil

2 smjalapeno seeded and diced

3 clovegarlic minced

2 smshallots minced

2 cshredded monterey jack cheese

How To Make corn queso

1Place half the corn in a food processor and add 1/2 cup of water. Puree until smooth or as smooth as you can get it. Strain through a fine mesh strainer discarding the solids. Set aside

2Add the oil to a large skillet. Saute the garlic, jalapenos, shallots and remaining corn for about 5 minutes. Add the strained puree. Stir in the cheese and cook until melted and bubbly. Garnish with cilantro

3Serve with tortilla chips
