Ingredients For cheesy black-eyed pea dip

1/2 stickbutter or margarine

1/2 cchopped onion
-
1/2 clovegarlic, finely minced

12 ozsharp cheddar cheese, shredded

2 canblack-eyed peas, drained and rinsed (15 oz. cans)

1jalapeno pepper, finely chopped
-
1 canchopped green chilies (4 oz. can)

cumin, salt and pepper to taste
How To Make cheesy black-eyed pea dip

1In a medium saucepan over medium-low heat, melt butter and then add onions. Saute until golden then add garlic, jalapeno and chilies and cook for 1 minute.

2Lower heat and add cheddar cheese, stir until melted. Add the black-eyed peas and cook for 5 minutes, stirring constantly. Season to taste with salt, pepper, cumin and chipotle powder if you'd like a bit more heat. Serve warm with tortilla chips.
