black bean hummus

I have friends who are not very fond of garbanzo beans, so I enjoy the challenge of finding things they do like. This one is a favorite with work group lunches, and I usually serve with my Baked Pita Triangles.

Ingredients For black bean hummus
- HUMMUS

1 canblack beans, not drained

2 clovegarlic, chopped

3 Tbspolive oil or sesame tahini

2 Tbsplime juice, fresh

2 Tbspwhite wine vinegar

1/2 tspground cumin

1/2 tspground coriander

1/4 to 1/2 tspsea salt, or to taste

1/2 tspfresh ground black pepper
- TOPPING

2/3 cplain greek yogurt

2 Tbspsnipped coriander leaves

2 Tbspfinely chopped green onions

1/2 tsplime juice, optional
How To Make black bean hummus

1Place hummus ingredients in the workbowl of a food processor. Process until very smooth. Spoon into a serving dish.

2Stir together the topping ingredients. Spoon in dollops over the hummus. (Topping is optional, but we like it because it adds a fresh flavor.)
