Ingredients For black bean and corn salsa

  • 1 can
    black beans, rinsed and drained
  • 1 pkg
    (10 oz) frozen corn, thawed
  • 1/3 c
    red pepper, chopped
  • 1/3 c
    red onion, chopped fine
  • 1/3 c
    cilantro, chopped fine
  • 1
    ripe mango, peeled, pitted and chopped
  • 2 Tbsp
    fresh lemon juice
  • 1/2 c
    orange marmalade or guava jelly
  • 2
    serrano chiles seded and chopped fine

    Combine all. Refrigerate. Serve with lime tortilla chips or with grilled chicken or pork
