beer cheese dip (or spread)

I first made this yummy beer cheese dip many years back and it’s a family favorite! I think I originally found the recipe online but played with the ingredients, as usual. But it’s an easy recipe to adjust for your family’s tastes. We don’t like spicy, but it would be easy to adjust by adding some finely chopped jalapeño or chipotle pepper for a little heat.

Ingredients For beer cheese dip (or spread)

  • 8 oz
    cream cheese, room temp.
  • 1 stick
    butter, room temp.
  • 8 oz
    cheddar cheese, finely shredded
  • 2 clove
    garlic, finely minced***
  • ***OR 1/4 c
    onion, grated, adjusted for taste
  • 1/4 tsp
    black pepper
  • 1/4 c
    beer, maybe a little more
  • some
    paprika or parsley to garnish
  • assorted
    crackers, chips, toasted breads, and/or crudités
  • OPTIONS
  • some
    finely grated jalapeño or chipotle pepper for heat
  • some
    finely grated bell pepper for color

How To Make beer cheese dip (or spread)

  • 1
    Mix the room temp. cream cheese and butter together with a mixer or food processor.

    Add the cheese, garlic OR onion, pepper, and beer**. Blend well. Adjust consistency by adding a little more beer, if necessary. (Thinner for dip, thicker for spread.) **Add jalapeño or chipotle pepper at this point, if using.

    Spoon into a serving dish and garnish with parsley or paprika, as desired. Serve with crackers, tortilla or potato chips, toasted bread, and/or crudités. =^..^=
