addictive chorizo pepper jack dip

This is a favorite of my husband's--excellent game day food! The greatest thing is that the dip doesn't immediately harden like most other cheesy dips. However, it will become a little less smooth once it fully cools off, though there's rarely any left by that point! Cover with aluminum foil if transporting this. I like the dip best with sweet potato chips. It goes well with the creamy-spicy flavors in the dip. It's also really great with celery sticks and sweet potato tortilla chips.

  • 1 lb
    ground mexican chorizo, cooked and crumbled
  • 8 oz
    cream cheese, softened
  • 2 c
    shredded pepper jack cheese
  • 1
    red onion, diced
  • 1/3 c
    mayonnaise
  • 1/2 tsp
    ground paprika
  • 1 tsp
    garlic powder
  • 1 stalk
    green onion, chopped
  • 1/4 tsp
    ground cayenne

    Preheat oven to 425 degrees F.

    Mix cream cheese, pepper jack cheese, onion, mayonnaise, garlic powder, and paprika together in a bowl; transfer to a baking dish or pie pan and spread evenly. Bake in the preheated oven until top is brown and bubbling, about 20 minutes.

    Top with chorizo, green onion, and cayenne.
