20 tbsp Unsalted butter cold
4 large Egg yolks room temp
8-12 tbsp Ice water
1 large Egg beaten
8 Yukon gold potatoes roughly chopped
2 tbsp Olive oil
1 Yellow onion chopped
4 Carrots chopped
1 tbsp Fresh ginger minced
3 Serrano chiles deseeded and minced
2 1/2 tsp Ground Coriander
2 1/2 tsp Ground cumin
1 tsp Ground turmeric
1 tbsp Garam masala
1/2 tsp Ground cinnamon
1 1/2 tsp Sea Salt
2 tbsp Fresh lime juice
1/3 cup Sour cream or yogurt
3 cups Green peas
