Ingredients For tuna and white bean salad

15 ozcan white beans
-
5-7 ozcan tuna packed in water

1/4 csweet onion, finely chopped
-
2 Tbspred or yellow pepper, finely chopped

10-12kalamata olives, cut up
-
3 mdtomatoes, cut into wedges
-
2 Tbspprepared greek salad dressing
-
salt, pepper, balsamic vinegar
-
1/4 cfeta cheese crumbles
-
lettuce for garnish
How To Make tuna and white bean salad

1In a bowl, mix together rinsed beans, drained tuna, onion, peppers, olives. Stir in salad dressing. (If not using prepared dressing, check out a recipe for Greek salad dressing).

2Cut each tomato into 8 wedges, keep attached at the bottom. Sprinkle with salt, pepper and balsamic vinegar on cut edges of tomatoes. Scoop equal portions of tuna salad on each tomato. Top with feta cheese. Season with salt and pepper to taste. Tuck some lettuce around each tomato, if desired.
