Ingredients For tuna and white bean salad

  • 15 oz
    can white beans
  • 5-7 oz
    can tuna packed in water
  • 1/4 c
    sweet onion, finely chopped
  • 2 Tbsp
    red or yellow pepper, finely chopped
  • 10-12
    kalamata olives, cut up
  • 3 md
    tomatoes, cut into wedges
  • 2 Tbsp
    prepared greek salad dressing
  • salt, pepper, balsamic vinegar
  • 1/4 c
    feta cheese crumbles
  • lettuce for garnish

How To Make tuna and white bean salad

    In a bowl, mix together rinsed beans, drained tuna, onion, peppers, olives. Stir in salad dressing. (If not using prepared dressing, check out a recipe for Greek salad dressing).

    Cut each tomato into 8 wedges, keep attached at the bottom. Sprinkle with salt, pepper and balsamic vinegar on cut edges of tomatoes. Scoop equal portions of tuna salad on each tomato. Top with feta cheese. Season with salt and pepper to taste. Tuck some lettuce around each tomato, if desired.
