8large cucumbers, peeled and sliced

1/4 csalt

4 mdonions, peeled

4 mdgreen bell peppers, seeded

4 1/2 tspcelery seed

4 1/2 tspmustard seed

2 1/2 cgranulated sugar

1 1/2 capple cider vinegar

The celery seed can be adjusted to your liking.

1Place cucumbers in a large glass bowl. Stir in salt. Chill overnight.

2Drain and put through a coarse grinder or food processor.

3Grind peppers and onions.

4Place the vegetables in a saucepan with the seasonings, sugar, and apple cider vinegar. Bring to a boil. Cook for 30 minutes; stirring often. Put in sterilized jars and process for 10 minutes.
