Ingredients For salad nicoise

5 oztuna in water drained

1 tspcapers rinsed and drained

2 Tbspsliced sicilian or kalamata olives
-
1 cfresh green beans blanched
-
1/2 cthinly sliced red onion

1red bell pepper cut into rings
-
2 lghard boiled eggs sliced (preferably pickled)

2 cchopped fresh salad greens
-
1southwest style chicken breast cut into 1 inch pieces

2 Tbspextra virgin olive oil
-
1 Tbspfresh lemon juice
-
1/2 tspdijon mustard
-
1/2 clovegarlic grated
-
1 tsplemon zest
How To Make salad nicoise

1In a small bowl combine the first 3 ingredients tuna,capers and olives.Toss gently and set aside.

2On a large plate arrange blanched green beans on edge of plate. Layer salad greens inside of green beans followed by onions and red bell pepper. Make a small hole in middle of plate. Spoon tuna mixture in the center of plate. Layer chicken and eggs in circular fashion on top of greens.

3In a small bowl add the last 5 ingredients Olive oil,lemon juice,dijon,garlic and lemon zest and whisk until emulsified. Drizzle over the salad and serve.
