When it's just too hot to cook, this is a perfect sandwich to make. It started as a pantry/fridge cleanout and is now something I'll make again and again.

Ingredients For mediterranean inspired tuna sammies

26" hoagie rolls

15 oz can of tuna, drained

2scallions, chopped

2 Tbspmayonnaise

1/4 tspcelery salt

2 lgeggs, hard boiled and sliced

1/4 ckalamata olives sliced

1/3 cartichoke hearts, chopped

3/4 cbaby spinach leaves

freshly ground pepper
How To Make mediterranean inspired tuna sammies

1Toast your hoagie rolls in oven or stovetop grill.

2Slather a small amount of mayo on the bread so the spinach leaves have a place to rest.

3To make the tuna salad, combine the rest of the mayo, celery salt and scallions with the tuna. When it's smooth to your liking, add equal amounts to both hoagies. Now add the olives, chopped artichoke hearts and sliced egg. Sprinkle with black pepper and dig in.
