My mom made this all the time. She never wrote down any recipes but this is my copy of her potato salad.

Ingredients For mama's potato salad

5 lbrusset potatoes, peeled and cubed

4hard boiled eggs, diced

2 Tbsponion, chopped

10green olives, diced
-
2 Tbspsweet relish
-
1 cmayonnaise
-
4 tspprepared mustard
-
1 tspcelery seed
-
1 tspsalt
How To Make mama's potato salad

1Place potatoes in a large pot. Cover with water and boil until potatoes and just done. (about 10 minutes) DO NOT OVERCOOK. You don't want them to turn to mush.

2In a large bowl, mix all ingredients together gently. Be sure not to break up the potatoes.

3This can be eaten right away but is much better if chilled at least an hour. Refrigerate overnight for best results as the flavors will blend more.
