- SALAD

5 cpotatoes, peeled, cooked and cubed (about 6)

1 csliced celery

1/2 cchopped onions

2hard bolied eggs, chopped

1/2 tspdried parsley

salt and pepper to taste
- DRESSING

1 clight mayonnaise

1/4 clight sour cream

1 1/2 Tbspvinegar

2 Tbspsugar

1 Tbspmustard
How To Make light potato salad

1Combine dressing ingredients and set aside.

2In a large bowl, combine all salad ingredients.

3Toss dressing with salad. Refrigerate before serving.

4Note: If using Miracle Whip instead of mayonnaise, omit vinegar and use only 1 scant tbls. sugar.
