Ingredients For light german potato salad

1 Tbspcanola oil

4 Tbspreal bacon pieces, lower fat and sodium

3 Tbsponion, chopped

1/2 ccider vinegar

1/4 cwater
-
5 Tbspsugar

1/2 tspsalt

1/4 tsppepper
-
1/2 tspdry mustard
-
1 Tbspprepared yellow mustard
-
1 Tbspflour
-
1/3 ccold water
-
3/4 tspdried parsley
-
6 - 8medium potatoes
How To Make light german potato salad

1Peel and cook potatoes. Slice or cube and set aside.

2Add canola oil and 1 tablespoon of bacon pieces to a pan. Heat until the bacon pieces start to sizzle and add chopped onions.

3Cook onions for 5 minutes and add the vinegar, 1/4 cup water, sugar, salt, pepper, mustards and parsley. Bring to boiling.

4Turn down heat. Dissolve flour in cold water and slowly add to liquid, stirring constantly. Cook until thickened.

5Pour over potatoes and stir in the remaining 3 tablespoons of bacon pieces. Toss to mix well.

6Can be served hot, cold or at room temperature.
