Ingredients For creamy stuffed baked potatoes

  • 4 lg
    baking potatoes
  • vegetable oil
  • 1/2 stick
    butter
  • 8 oz
    carton of sour cream
  • 2 tsp
    prepared horseradish
  • 1/2 tsp
    salt
  • freshly ground pepper to taste
  • 1 c
    shredded cheddar

How To Make creamy stuffed baked potatoes

    Scrub the potatoes thoroughly and rub skins with oil; bake at 400 for 1 hour or until done.

    Allow the potatoes to cool to touch. Slice each potatoe legnthwise in half; carefully scoop out pulp, leaving shells in tact. Mash remaining ingredients together with pulp, except for cheese. Stuff shells with potatoe mixture; place on a baking sheet. Sprinkle with cheddar cheese; bake until cheese melts. Yield 4 servings.
