This is of my favorite potato salads...my own concoction I threw together one day when I didn't have enough Hellmans for the amount of potatoes...turns out everyone loved it and wanted the recipe...this is for a smaller bowl...you can always double the dressing if need be. I used a small 1 1/2 pound bag of baby yellow potatoes...just boil and cut in half...such a yummy salad...enjoy!

Ingredients For cassies sour cream n onion tater salad

1 1/2 lbbaby yellow potatoes

2 -3green onions sliced or can use sweet onion

3eggs, boiled

3 - 4baby carrots, shredded

1 stalkcelery, diced small

1/3 cmayonnaise

1/2 csour cream

1/8 tsptumeric
-
1/4 tspcelery salt
-
1 tspstone ground dijon mustard or regular

1/2 tsppepper
-
1 tspsalt
-
1/8 tspcayenne pepper

1 tspfresh dill, chopped fine, or dried

1 1/2 tspsugar
-
1 1/2 tspdried onion flakes

How To Make cassies sour cream n onion tater salad

1Boil your potatoes in their jackets in salted water until fork tender. Drain to cool. Remove any bad spots there might be. Slice in half.

2In a small bowl blend the mayonnaise, sour cream, salt, pepper, dried onions, tumeric, sugar, celery salt, cayenne, dill, Dijon mustard. Set aside.

3In a larger bowl, toss potatoes, carrots, celery, green onions, 2 chopped eggs or more if you like. (I save one for garnish.)

4Pour dressing over potatoes and carefully stir to blend the dressing evenly throughout the potatoes. Sprinkle with paprika, green onions and add some sliced egg for garnish. Chill for a few hours before serving. I always taste before serving and add more seasonings if needed. Enjoy!
