tortellini pasta salad
We had a salad potluck at work and someone brought a tortellini pasta salad. It was so delicious, I decided to make a similar one but with some fresh basil to boost the flavor.

How To Make tortellini pasta salad
-
1Cook the tortellini per directions and then drain and spread out in a pan or cookie sheet. Stick in the fridge to cool. I used 1 package of fresh cheese tortellini from Trader Joe's. It was a smallish package.
-
2As the pasta cools, cut the tomatoes in half. Stack up 4 slices of smoked gouda and cut into bite sized pieces. I used 4 slices from a Trader Joe's package of smoked gouda. Use more or less depending on your preference.
-
3For the dressing: Place the basil leaves in a food processor or chopper, chop up, add the olive oil and process some more. Add the yogurt, mayo and vinegar. Add salt, sugar and black pepper to taste.
-
4Toss pasta, tomatoes, cheese and dressing together in a bowl. Return to fridge and refrigerate until dinner time. It was even better the 2nd day.
