This is one of my families summer favorites. It's cool and refreshing, not heavy on the tummy.

Ingredients

  • 1 package orzo (16 oz)
  • 1 package spinach leaves (10 oz)
  • 1 package crumbled feta (12 oz)
  • 1/2 - red onion, finely chopped
  • 2/3 cup toasted pine nuts
  • 1/2 teaspoon dried basil (or fresh if you have it)
  • 1/4 teaspoon white pepper
  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1 teaspoon fresh parsley, minced

How To Make pretty good salad "orzo" you say

  • Step 1
    Cook orzo, boil 9 minutes, drain and rinse with cold water.
  • Step 2
    Toast pine nuts, be careful not to burn.
  • Step 3
    Mix spinach, feta, onion, and pine nuts. Reserve in bowl.
  • Step 4
    Combine oil, vinegar, white pepper, basil, and parsley. Stir well.
  • Step 5
    Mix orzo with spinach mix. Pour dressing over salad.
