This is one of my families summer favorites. It's cool and refreshing, not heavy on the tummy.

Ingredients
- 1 package orzo (16 oz)
- 1 package spinach leaves (10 oz)
- 1 package crumbled feta (12 oz)
- 1/2 - red onion, finely chopped
- 2/3 cup toasted pine nuts
- 1/2 teaspoon dried basil (or fresh if you have it)
- 1/4 teaspoon white pepper
- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
- 1 teaspoon fresh parsley, minced
How To Make pretty good salad "orzo" you say

Step 1Cook orzo, boil 9 minutes, drain and rinse with cold water.

Step 2Toast pine nuts, be careful not to burn.

Step 3Mix spinach, feta, onion, and pine nuts. Reserve in bowl.

Step 4Combine oil, vinegar, white pepper, basil, and parsley. Stir well.

Step 5Mix orzo with spinach mix. Pour dressing over salad.
