mom's macaroni salad
This is a great picnic or BBQ salad. Kids like it because of the colors and cheese. You can add any veggies you like to it, I have added broccoli florets and it was delicious!

Ingredients For mom's macaroni salad

8 oz1- 8 oz. package of small pasta, cooked according to package directions and drained

1/2 lbcolby or cheddar cheese, cubed in small squares

1 Tbsppimento, chopped

1/2medium green pepper, diced
-
1/2 cdill pickle relish
-
1 cbroccoli florets, cut in bite sized pieces (optional)

1large or 2 small dill pickles cut in small pieces
-
1/2 cancelery, diced
-
1/4 colives, green with pimentos sliced
-
1/4 cblack olives, sliced
-
1/4 conion, finely chopped
-
2 Tbspshredded carrots
How To Make mom's macaroni salad

1Prepare macaroni according to directions on the box. Drain and set aside in a large bowl.

2DRESSING: In a medium sized bowl combine for dressing: 1/4 tsp salt, 1 tsp pepper, 1 tsp sugar, 1 c lite mayo and 1/4 cup mustard, brown or yellow. Stir well.

3Cut all vegetables into small cubes or bite sized pieces. Add to macaroni in large bowl. Pour dressing over macaroni and other ingredients. Stir gently. Refrigerate for at least 3 hours before serving. Store leftovers in a tightly sealed container in refrigerator.
